With snow and cold temperatures finally here, and US thanksgiving just passed, I turn more often than not, to hearty slow cooked meals. Working all day, I find it helpful to break out my Dutch oven and make something at lunch that will be ready when we get home. This pork roast is a family favourite that has made it way into our weekly rotation. It’s easy, tasty and I add tons of veg to cook along side it. It’s great because after the initial prep, you pop it into the oven and fugget about it 🙂 I found the recipe on a video, so the measurements aren’t in stone, but I always measure with my heart!
1 pork shoulder (3-5lbs)
3 apples (pick your favourite, I like macintosh)
1 jar of sauerkraut in wine (again, i used the whole jar, because I didn’t want any leftover, so I dumped it all in)
Your choice of seasoning for the pork, coated liberally (I use Kinders The Blend and Dan-o original seasoning)
2 onions, sliced thinly
- Slice your onions and place in dutch oven
- Slice apples and add as well
- Season pork with spices, so it’s well coated
- Place on top of the bed of onions and apples
- Dump the jar of sauerkraut evenly on top
- Add your choice of root veggies, I like parsnip, turnip and carrot
- Cover and cok low and slow at 300F for 3 hours. In the last hour add potatoes or make mashed to go with
- When the veggies/potatoes are ready, remove from pot and place on serving dish
- Pull pork apart and mix with apples, onions and kraut
- Enjoy!
