Bush-Style Mitchell Soup Co. Beef Barley Moose & Garden Veg Stew
This season at camp we took one of Mitchell Soup Company’s hearty mixes and made a Wilderness North version — swapping in fresh veggies from the garden and moose meat from the fall hunt.
Ingredients:
- 1 1 Mitchell Soup Company Beef Barley Soup Mix (or other dry premade Barley Bean soup mix)
- 1–1.5 lbs moose meat, venison or beef cubed small (use your spoon as a guide for sizing)
- 1–2 cups small diced garden vegetables (carrots, celery, potatoes, beans, squash)
- 1 small onion, chopped fine
- 1 tbsp oil or butter
- Salt, pepper & seasoning to taste
How we make it “bush-style”:
- Brown moose meat in oil over medium heat.
- Add onions and cook until soft.
- Add the soup mix + water according to package.
- Toss in chopped garden veggies.
- Slow simmer on low until tender and fragrant.
Serve with bannock, crusty bread, or straight from an enamel mug on the dock at sunset.
