Sometimes we think it is just the batter. But the truth is it’s the remarkable Canadian Walleye white fish that is so mouth watering. Today I share two recipes with you for leaving the batter behind but not the flavour…the perfect answer to the question:

How should I prepare these classic Canadian meals without piling on the calories. Healthy and delicious? You bet. 

 

Skillet Fish & Veggies

1(14 1/2-oz.) can ready-to-serve chicken broth

cup fresh baby carrots, quartered lengthwise

1/2 cup chopped celery

tablespoon dried parsley flakes

1 3/4 cups uncooked instant brown rice

1lb. walleye fillets

1/2 teaspoon garlic-pepper blend

 

Steps:

In 12-inch nonstick skillet, combine broth, carrots, celery and parsley flakes. Bring to a boil. Reduce heat to medium-low; cover and cook 3 minutes.
Uncover skillet; return to a boil. Stir in rice. Top with walleye fillets; sprinkle with garlic-pepper blend. Reduce heat to medium-low; cover and cook 10 to 15 minutes or until liquid is absorbed and center of fish flakes easily with fork. Garnish with fresh parsley sprigs if desired.
Baked Walleye
walleye fillets
6 -8 tablespoons melted butter
tablespoon lemon juice
1cup mushroom (sliced)
2 tablespoons finely chopped onions
salt and pepper
Steps:

Preheat oven to 350 degrees.

Dip fish in melted butter, salt, pepper and lemon juice.

Place fish fillets into shallow baking pan.

Place mushrooms and onions over the top of fish, then spoon any remaining butter mixture over fish.

Bake at 350°F for 15-20 minutes until fish flakes.
