Walleye in Foil
Adapated from All Recipes
Serves 4
Preheat oven to 400 degrees F or 200 degrees C; or prepare grill or coals.
Ingredients:
2 tomatoes, cubed
1 red bell pepper, seeded and cubes
1 onion, minced
2 tbs olive oil
2 tbs fresh basil
1 clove garlic minced*
aluminum foil
4 five ounce fillets
1 lemon juiced
salt and pepper
Combine everything but the fish in a bowl and mix well.
Lay four sheets of foil on workspace; spray with cooking spray or oil and place
a fillet on each piece. Divide and spoon tomato mixture over each fillet, drizzle
with lemon juice and sprinkle with salt and pepper. Wrap foil into packet and place
in oven or on grill. Cook approximately 20 minutes.
The Walleye in foil is now completed.
Can substitute other white fish such as cod.
