Let’s be honest. The weather this past month hasn’t been very nice. I don’t mind the snow, but the cold can stay away. We had a few days where the temps were -51 with the wind. That’s cold!
This kind of weather has me hankering for hearty dishes like chili, chicken noodle soup, and my all-time favourite, meatloaf and mashed potatoes. Over the years I have modified my meatloaf recipe and I’d like to think that I’ve perfected it. I found an article on the food network that gives several different takes on traditional meat loaf. For myself, I love to go traditional:
- I use oatmeal, eggs, onion soup mix, mustard, Worcestershire sauce, salt and pepper.
- Then I make personal sized loaves and cover with a layer of bacon. Bake for 45 mins at 375.
- Add some garlic mashed potatoes and cooked frozen peas, you’ve got an amazing comfort food meal.
